Mexican Skillet Casserole

This recipe comes from "Living Well a North Memorial Publication"
3 c rotini pasta
1 lb ground beef
1/2 c onion
1 can corn
1 can drained black beans
1 can diced green chilies
2 cans diced tomatoes
1 pkg taco seasoning
1 c mild salsa

Make the pasta. Brown beef with onion add rest of ingredients; simmer 10-15 minutes. We ate it with tortilla chips and cheese. It's good and makes a TON-be warned! We'll be having this for the next few dinners...=)

O.K. I made this other night--exactly as is and it did make PLENTY. We had the missionaries over that night--those two each had 2 very good size helpings and then my family of 7 ate too. We had just enough left over for my hubby's lunch the next day.

It was really good--and hubby said he prefers it with the chips. He forget them for his lunch and he said it wasn't nearly as good. It apparently needed the little bit of crunch in his opinion.
